Who owns Florida Cracker?
Florida Cracker Kitchen is owned and operated by brothers Blair and Ethan Hensley. What started in 2012 with their first Brooksville location has grown into a family of restaurants across Florida, all celebrating Old Florida flavors, hospitality, and culture.
How many Florida Cracker restaurants are there?
There are now eleven unique locations across Florida, including our flagship Florida Cracker Kitchen, the TAP ROOM, the COOK SHACK, and BOB’S OYSTER BAR in Brooksville. Plus, the FISH CO. in Citrus, the FEED LOT in Webster, LUNCH ON LIMOGES in Dade City, the MONKEY BAR & KITCHEN in Homosassa, FLORIDA CRACKER OYSTER BAR & GRILL in Keystone Heights, and the all new SHAMROCK’S in Floral City!

Does Florida Cracker Kitchen serve alcohol?
Absolutely! Many of our locations feature full bars, including the Tap Room, Fish Co, Brooksville Oyster Bar, Florida Cracker Oyster Bar, and the Monkey Bar. You’ll find over 150 bourbons and whiskeys at the Tap Room and Fish Co, a dedicated tequila bar at the Monkey Bar, plus craft beer, cocktails, and select liquor at the Cook Shack. Florida Cracker cooking is all about paying respect to the lush natural beauty and abundant natural resources that we have all around us here in Florida. The original Florida Cracker cowboys and their families carved out a beautiful existence in an unforgiving location and relied on the resources around them to survive. Does Florida Cracker offer gluten-free options?
Many of our locations offer naturally gluten-free options like fresh proteins and veggies, and we can often make gluten-friendly accommodations upon request. However, since flour and breading are used in several of our kitchens, we cannot guarantee a completely gluten-free environment for guests with severe allergies.

What’s a signature dish at Florida Cracker?
We serve up plenty of unique twists on Southern classics, so it’s tough to pick just one favorite. Some of our most popular dishes include the World Famous 10,000 Island Shrimp & Grits, giant cinnamon rolls, and homemade corned beef hash with eggs. What is the history behind the term “Florida Cracker”?
Florida Crackers were colonial-era British and American pioneer settlers in what is now Florida. The first Crackers arrived in 1763 after Spain traded Florida to Great Britain following the latter’s victory over France in the Seven Years’ War, though much of traditional Florida Cracker folk culture dates to the 19th century.
Florida Crackers were some of the first settlers to try and tame the unforgiving Florida frontier. Driving cattle through the swamps and wide grasslands of Florida, these tough-as-nails cowboys and cowgirls are thought to have been called “Crackers” for their distinctive cattle whips. Florida’s “Cracker cooking” dates back to some of the same methods passed down through generations. A few of our signature original recipes that we’ve curated and perfected to taste just like they came out of Grandma’s kitchen include fried chicken and waffles, shrimp and grits, and some of the best homemade corned beef hash this side of the Mississippi.
